    Cheese on toast.

    Baked potato with cheese and beans and a salad.

    Pasta and pesto with salad.

    Hi Kailey,

    I am also a vegetarian :) One of my favorite simple dinners is noodles sprinkled with olive oil and parmesan cheese. To do this, just cook your pasta of choice according to the box (usually by bringing the pot of water to a boil, adding 1 teaspoon of salt, adding your pasta, and cooking for 10 minutes. Then, drain your pasta, add 1-2 tablespoons of olive oil, stir, and sprinkle with the cheese on top).. it’s very yummy! If you want to add broccoli or another vegetable, simply add it to the pot with the pasta in it about 2-3 minutes before it is done cooking, drain it with the pasta, and just keep it in there while mixing in the olive oil.

    Other things that you can make would include a grilled cheese sandwich or a pizza bagel. If you have bagels, spread apart the two halves, spoon on some tomato sauce or pizza sauce, and top it with some mozzarella cheese. You can either stick it in the toaster oven and toast on light or microwave for about 1 minute.

    If you have a box of mac & cheese, that is also a really yummy dinner. Anything like that will be simple to make and taste very good!

    If you’re feeling a little more daring, you can try Macadamia Nut-Pesto Fettuccine:
    Ingredients
    1 (9-ounce) package fresh fettuccine
    3 cups fresh basil leaves
    1/4 cup half-and-half
    3 tablespoons roasted macadamia nuts
    3 tablespoons grated fresh Parmesan cheese
    2 tablespoons fresh lemon juice
    3/4 teaspoon salt
    1/2 teaspoon freshly ground black pepper
    Preparation
    Cook pasta according to package directions, omitting salt and fat.

    While pasta cooks, place basil and remaining ingredients in a food processor; process until smooth. Combine basil mixture and pasta in a large bowl, tossing to coat.
